ONE is the current cocktail menu at Nightcap, the speakeasy behind Class Act at 1737 N Damen Ave in Bucktown, Chicago.
It takes one cocktail, the Negroni, nine ways across dry, juicy, sweet, and savory, plus three reserve cocktails served with paired bites, a spirit-free section, and bar bites from Chef Nicolai Mlodinow's kitchen. Cocktails run $14–$35.

VAYA Á VALLARTA
Flor del Desierto Carnei sotol, Peloton de Muerte mezcal, Mexi-lager "vermouth," Lustau Los Arcos amontillado sherry, Contratto Bitter, chocolate tincture — an Aztec molé Negroni meets a Michelada; savory, sweet, smoldering, piquant. Served with molé-spice "sand" and four meringue cookies: tajín, tomato, cilantro, Tecate.
